100th post! An ode to oatmeal!

On a blog I follow the author got a great deal on oatmeal & so posted her favorite oatmeal recipes. I am going to copy her - I think oatmeal is great too. Scott is the true oatmeal lover in our family - he eats it every morning with chunky peanut butter stirred in. What are your favorite oatmeal recipes?

MULTIGRAIN PANCAKES
1 cup bleached all-purpose flour
1/3 cup each cornmeal, whole wheat flour, & old-fashioned oats (for one-cup total)
4 teaspoons sugar
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1-1/2 cups low-fat buttermilk (BTW I use real buttermilk!)
1/2 cup low-fat milk
2 large eggs
2 tablespoons vegetable oil
1 teaspoon vanilla extract
Vegetable oil for brushing griddle

*Heat large nonstick skillet or griddle over low heat while preparing batter.
*Mix flour, cornmeal, whole wheat flour, oats, sugar, salt, baking powder & baking soda in a medium bowl. Microwave buttermilk & milk together in a 1-quart Pyrex measuring cup to room temperature, 20-30 seconds. Whisk eggs, oil, & vanilla into the buttermilk & milk. Pour wet ingredients into dry ingredients and whisk until just mixed. Return batter to measuring cup, stirring in a teaspoon or so of water, if necessary, to make a thick but pourable batter.
*Increase heat to medium & lightly brush skillet or griddle with oil. Pour in batter, about 1/4-cup at a time, working in batches to avoid overcrowding. When pancake bottoms are golden brown & tops start to bubble, 2-3 minutes, flip pancakes & cook until golden brown on remaining side. Serve hot.

PENNI BODILY'S APPLE CRISP
4 cups apples, sliced
1/2 cup dried cranberries
2/3 cup brown sugar, packed
1/2 cup flour
1/2 cup oats
3/4 teaspoon cinnamon
3/4 teaspoon nutmeg
1/3 cup butter
1/2 cup chopped walnuts

Place apples & dried cranberries in bottom of 8x8-inch pan (or whatever size pan you have). Mix dry ingredients together with butter; cut together using a pastry blender. (A food processor makes this dough too fine.) If you don't have a pastry blender, use two knives to cut up the butter. Sprinkle butter mix & walnuts over apples. Bake at 375 for 30 minutes. Serve with vanilla ice cream or Cool Whip.




GRANDMA’S WAY TO START THE DAY GRANOLA

10 cups regular oatmeal
2 cups almonds (slivered or sliced)
2 cups coconut
2 cups brown sugar
3/ 4-cup oil
1/ 2-cup peanut butter
3/ 4-cup honey
3/ 4-cup water
2 teaspoons vanilla

Mix oatmeal, almonds, coconut & brown sugar. Heat oil, peanut butter, & honey, water & vanilla in a pan until peanut butter dissolves. Pour over dry ingredients & mix. Spread on two large cookie sheets. Bake at 250 for 45 minutes. Let cool. Add dried fruit. Serve with milk or yogurt. Wow!


Mary SANT’S HOT CEREAL

1/3 cup oatmeal
1/3 cup Grape Nuts
2/3 cup water
cinnamon
sugar
dash of salt


Microwave for 2 minutes on high. Throw hard Grape Nuts on top.

Pam NEAD’S HOT CEREAL

1-cup steel-cut oats
1/ 2-cup 10-grain cereal
1 tablespoon flax seed
1-tablespoon millet

Bring to a boil. Cover & let sit 15 minutes. (Rice cooker, anyone?)

Mmmmmm..those look good. I wanna try the Hot cereal one because I love, love, love,love....(can I say it enough?) steel cut oats.
BTW, I still use about 30 recipes that you shared with me. You are a wealth of recipe knowledge! My family thanks you. :)

I also LOVE oatmeal, although breakfast can sometimes get boring. Therefore, I will be trying the pancakes. Since we now have 12:30 church, your recipe comes just in time.

What are steel cut oats?

I want to try the grapenuts and oatmeal microwaved together. mmm.

Oh, and the pancakes.

Steel cut oats are oat groats that are cut into little tiny cubes (kinda like a half grain of rice).

The pancakes are truly divine. We use real buttermilk & freshly ground wheat flour for the most amazing taste but they're good either way.

Update: Made the pancakes for breakfast this morning and the plates were licked clean! Husbands words, "You can make these any time you want!" repeated several times. (:

I think I need ALL your recipes...write them down for me, will you? Also, I have a recipe for Cinnamon Topped Oatmeal Muffins. They are wonderful!
